Although the days of working, rushing home, and fixing meals are are behind me, I’m still a busy person. I imagine that you are too. With that in mind, I try to keep things simple. That doesn’t always mean fast, but you won’t find complex procedures here.

The cookneasy tagline is vegetarian, pescatarian, easy — and that’s what you’ll find here. My goal is to post easy healthy recipes that fall into the vegetarian and seafood categories. I do a little baking too and I share some of my favorite recipes for muffins and biscuits.

Vegetarian Recipes

About half the easy healthy recipes on cookneasy are vegetarian. Here are some examples:

Pescatarian (Seafood)

A pescatarian is someone who eats a mostly vegetarian diet but also eats fish and seafood. That describes me. Here are some tasty options in that category:

- Tangy Pasta with Shrimp
- Southwestern Fish Chowder
- Pan-Seared Salmon with Cabbage and Spinach
