Brown and Wild Rice Pilaf – Instant Pot

Brown and wild rice pilaf is an easy, delicious side dish that you can make in your Instant Pot. Try this hearty, hassle-free rice pilaf today!

Ingredients

  • 1/2 cup brown rice
  • 1/4 cup wild rice
  • 1/4 cup pasta
  • 1/4 cup almonds
  • 1 T extra virgin olive oil
  • 1 T butter
  • 1/4 cup leek
  • 1.5 cup vegetable broth
  • 1/3 cup celery
  • 1/3 cup peas
  • 1/3 cup carrots
  • (Optional) Fresh parsley

Instructions

  1. Wash the celery and leek and then chop those two ingredients into small pieces.
  2. Select the Sauté setting on the Instant Pot (IP).
  3. Add the butter and olive oil.
  4. When the butter is melted, toss in the chopped leeks.
  5. Sauté them until they’re tender, but not browned.
  6. Put the brown and the wild rice in the IP along with the pasta.
  7. Stir this mixture for about 2-3 minutes, until the ingredients start to brown.
  8. Stir in the slivered almonds and give the mixture another minute or so.
  9. Heat the vegetable broth in the microwave or saucepan.
  10. Pour the hot broth into the IP with the rice, pasta, almond mixture.
  11. Microwave the peas and carrots for about 45 seconds to get them hot, and then add them to the ingredients in the IP.
  12. Put the lid on the IP and make sure the release handle is in the sealing position.
  13. Set the pressure cook setting to 25 minutes. 
  14. Let the pressure release gradually.
