Cashew Sesame Dressing

This tangy cashew sesame dressing can’t wait to find a home on soba or udon noodles. It’s also perfect as a dipping sauce for Asian dumplings or a dressing for Asian slaw. Try it soon and you’ll be hooked.

Ingredients

Scale
  • ½ tsp Miso paste
  • ¼ cup sunflower oil (other light oils work as well)
  • 1 tsp honey
  • ½ to 1 tsp sesame oil
  • ½ teaspoon sesame seeds
  • ½ cup Cashew puree
  • 1 clove of garlic minced or put through a garlic press
  • 1 tsp Ginger
  • 1 T Soy sauce
  • 1 T Lime juice
  • 1 T Rice wine vinegar

Instructions

Making the cashew puree

  1. Put a cup of unsalted cashews into a bowl and cover them with water.
  2. Let them soak for two hours and then drain the water.
  3. Put the soaked cashews in your blender.
  4. Pour in a half a cup of water and pulse until the cashew puree is creamy.

MAKING THE DRESSING

  1. After you’ve made your cashew puree, gather up the rest of your ingredients. 
  2. Measure everything and add it to a measuring cup. 
  3. Use a wire whisk to stir those ingredients.
  4. Add in the cashew puree and stir things until they’re all combined.
  5. Now it’s ready to pour on some noodles.

Notes

The prep time does not include the time it takes to soak the cashews.
