These chocolate mint pudding cups will add a bit of fun to your holiday meals. Nothing goes better with mint than chocolate during the holidays and this dessert is an easy way to combine those two flavors. You can serve them right away or put them in the fridge for later. If you do serve them later, wait until just before serving to sprinkle the crushed peppermint garnish on top.
Ingredients
Here’s what you’ll need for these cute pudding cups – chocolate pudding, milk, Cool Whip, and peppermint candies.

Making Chocolate Mint Pudding Cups
First, you need to crush the peppermint candies. I found some small candy canes and it took about 10 of those to make enough crushed peppermint for the recipe. If you use candy canes, leave them in the wrappers and roll the rolling pin over them to crush them. Then you can cut the wrappers open and empty the peppermint sprinkles into a measuring cup. That makes it easy peasy and not too messy.

Make the pudding according to package instructions and add about 1/3 cup of pudding to each of the six small glasses or other containers. Glass cups are a good choice because the layers show up nicely. The picture below shows how to make the second layer. Mix the remaining pudding with 1 cup of cool whip and 1/4 cup of crushed peppermint. Add this mixture as the second layer to each pudding cup.

Mix another cup of cool whip with almost all of the remaining crushed peppermint and put a dollop of that on top of each pudding cup. Sprinkle the remaining crushed peppermint on top of the dessert. The picture below shows how to layer the dessert.

Here’s a picture of the Cool Whip and peppermint mixture for the topping. Remember to keep a little of the crushed peppermint to sprinkle on top. If you don’t plan to serve the pudding cups right away, wait until you are about to serve them before adding the final peppermint sprinkles.

When your layers are in the cup, garnish each one with a little peppermint candy cane.

Put them out and watch them disappear.
