Tofu Lettuce Wraps

Make these crunchy, spicy, and colorful lettuce wraps as an appetizer or light main dish. Fill romaine leaves with fresh veggies, brown rice, baked tofu, and spicy peanut sauce; then watch them disappear.

Ingredients

  • 4 leaves of romaine lettuce
  • 1.52 cups of cooked brown rice
  • 1/2 pound of baked tofu
  • 1/2 cup shredded carrots
  • 1/2 peeled, sliced cucumber
  • 1/4 cup Spicy peanut sauce (or more to taste)
  • (Optional) 1 tablespoon fresh cilantro

Instructions

  1. Prepare the brown rice, baked tofu, and spicy peanut sauce ahead of time.
  2. Chop the baked tofu into bite-sized or smaller pieces.
  3. Wash four large leaves of Romaine lettuce. You can also use butter lettuce.
  4. Cut a cucumber in half and peel the half you plan to use. 
  5. Cut the peeled cucumber into thin strips.
  6. Put out the shredded carrots. 
  7. Put the cooked brown rice and the baked tofu pieces into a non-stick skillet and stir these ingredients on medium heat until they’re warm.
  8. Stir in about 1/3 to 1/2 cup of spicy peanut sauce to the rice and tofu mixture.
  9. Add a dollop of the rice, peanut sauce, and tofu mixture to each lettuce wrap.
  10. Top with shredded carrots and cucumber slices.
  11. (Optional) Snip or slice some cilantro leaves on top as garnish.
  12. Serve immediately.

Notes

The prep time listed here is the amount of time it takes to assemble the lettuce wraps. It does not include the time it takes to prepare the brown rice, spicy peanut sauce, or baked tofu.
